Can you imagine all those fast food joints that litter our malls and streets these days? They’re so many. And even if we don’t go out, there’s always fast food that can be delivered right to your doorstep. It’s crazy. All that junk we feed ourselves with. It can be compared to the amount of receipts an Epson TM-T88V issues every single day. It must weigh a ton. That said, I’m going to start my Vegan Sundays. Not this Sunday as I just had a Master Burger from Sango. Look!
But can I really do this? My no-rice challenge is actually beginning to underwhelm (is there such a word?) me. It’s too easy. Not eating rice now feels like normal everyday thing. I cook rice I don’t eat. I serve rice I don’t eat and I buy rice that others eat. And they’re all ok. So I’m up for another challenge. Now I want to be vegan. Not vegetarian but vegan. There’s a huge difference between the two. No eggs, no milk, no breads, no creamy soups and no cheese. Yes, it sounds boring and how much more difficult vegan is compared to vegetarian. But as with anything, it can be done if you set your heart and mind to it. Besides it’s only a day in one week. I can manage that.

Yesterday it was Pho Hoa and today it’s Kenny Rogers Roasters. This is what my little kid’s health break does to us. Take-outs and food deliveries galore. For the past how many days, I found myself having no time to cook. It’s pretty amazing cuddling with a cute almost 8 year old girl all the time. Don’t you agree? It’s the best in the world. Even better than chocolates, Jimmy Choo pumps, and yes, even that new leather briefcase from GotBriefcases.com. Nothing beats being with your kids.
And thank God for the long weekend. There would be more cuddling but we’re getting tired of take-outs. So it’s time to untangle myself from my kid, shower then go to the grocery to buy ingredients for supper.

I do this odd thing every time I try to go on a diet where I decide on the first day to skip the rice but choose to eat the most wicked type of food. You know what I mean….food with heavy sauces and all the works. I guess this is to compensate for the lack of a complete meal and also to prevent myself from going through a long, frustrating descent to the world of hunger.
I am clearly disillusioned. How can I lose weight when these days I find myself cooking Kare Kare, Bistek Tagalog and my own version of Caldereta. Yes I use chicken instead of beef but it also has coco cream. And it’s so good. You have to try this at home. I swear you’ll never cook Beef or Chicken Caldereta without coco cream ever again.
If you’re on a diet, skip the coco cream.
750 grams of Chicken, cut into serving pieces
1 250 ml of Tomato Sauce
1 can of Coconut Cream
3 Tbsp. of Pickle Relish
4 Tomatoes, sliced
1 onion, quartered
4 cloves of garlic, minced
2 bell pepper, sliced or julienned
3 medium potatoes, quartered
Baguio beans, optional
Green or Black olives
Cayenne Pepper or Chili Pepper Flakes
Chicken Caldereta without rice…
- Saute onions, garlic and tomatoes until garlic is slightly browned and onions and tomatoes are wilted.
- Add the tomato sauce and let it simmer for five minutes before adding the coconut cream. Simmer until it begins to thicken a bit. If you’re using beef, it’s best to saute and brown the beef first before adding the tomato sauce and coconut cream.
- Add the chicken and let it cook and simmer for 20 minutes.
- Add the pickles, potatoes, cayenne pepper and half of the bell peppers.
- When the potato is just about tender, add the olives and baguio beans.
- Season with salt and pepper and simmer for another five minutes.
Best with rice but then again, I’m on a diet so the rice here is for presentation purposes…But who am I kidding?!

I love breads. All types except for Pan De Coco. In fact, one of the reasons I fell in love with a suitor who became my boyfriend was because he brought me a box of Ensaimada regularly. And yeah, he was also nice. At the start. The relationship lasted 2 years. And I got fat. But I didn’t break up with him because I put on weight or he stopped bringing me ensaimadas, it was another thing not even closely related to this carb.
When McDonald’s came out with its Sausage English Muffin, I found myself craving and having it everyday for one whole week. Not only was I close to being best of friends with the delivery boy who brought me my orders every morning, I was also putting on the weight and it already showed on hips and my hamster’s cheeks. I had to stop.
That’s why I was hesitant to put this Orowheat Cinnamon Raisin English Muffin in my cart when I went grocery shopping at Rustan’s the other week. But guess what? The English Muffin won.

I love Saturdays. Just the thought of doing nothing the whole day relaxes me. Lately I’ve been whining about being too busy all the time. And just like that, it’s health break for my little girl…what does it mean? No classes for 10 days. It should be just a week but with the long weekend because of All Saint’s Day and All Soul’s Day and let’s also include Halloween, it would be 10 days of bliss for me. And with a vacation that long, a road trip is generally expected. Please let there be no storm and please, please let there be emergency roadside assistance. I hate to get a flat tire or an engine breakdown on the road and there’s no help around.
Or I could just stay home and take exercising to heart. I’d probably jumpstart my long overdue weight loss plan. No carbs. No rice. Yeah, yeah. You’ve heard it all before. But we’ll see. I might just end up catching up on TV series I missed while I was busy making other plans.
By the way, I am Godparent to another cute baby girl. And reception was at this old house built in the 80′s but it was made to look like a house from another period. The place was amazing. And the cupcakes were cute.
