My version of Monggo uses only 4 ingredients: monggo beans, malunggay, Purefoods Chorizo de Bilbao, tomatoes. Instead of using pork or shrimp, I use Chorizo de Bilbao (canned but you can also use the ones packaged in plastic). The Chorizo adds a different flavor but the authentic taste of monggo is still there. Just better though, IMO. Try the recipe and find out for yourselves. Preparation is also very easy.

First off, I boil and simmer the monggo beans ’til they’re soft. Then in a separate pan, I saute the tomatoes and chorizo until oil is rendered from the meat.

Before adding water or liquid, I make sure that the tomatoes are thoroughly cooked.
I know when it’s done when the skin has curled up.


I let the monggo simmer for at least 10 more minutes so the flavor from the tomatoes and chorizo mix well.

I add the malunggay leaves last. Here, my little girl helped me clean and wash the malunggay leaves.

Season with salt.

It had been raining nonstop this week. My kid had 3 days of no classes. Lucky for me, I got to catch up on my reading. This morning the sun decided to show up but looking at it now, we might be in for another rainy weekend. If that happens, we’re staying in. And it would be wise if you all do too. It’s not safe to be driving around when it’s raining cats and dogs outside.

Ever since school started, I’ve had to go to the grocery every week to buy MG’s pambaon. There are the usual bread, yakult, juices and eggs. I don’t make a list. I find making a list harder than going through every aisle in the grocery. It’s useless anyway. I almost always lose the list even before I reach the supermarket. So I gave up making lists. Besides I know Rustan’s Supermarket from top to bottom.
There are perhaps more than 3 major supermarkets in our area but I choose to do my grocery shopping in Rustan’s. Why? Because the meats are fresh and not frozen for God knows how long. Vegetables I don’t normally find in other groceries, I always find there. The place is small which I love because it means I can cover the whole lot in less time. And there’s always Ben & Jerry’s Ice Cream available. I don’t always buy but it’s nice to know I can have my fix whenever that craving kicks in.
So, where do you grocery shop?

Whenever I overeat, I almost always want something light the next day. Something light and filling like a chicken salad. So I made a chicken salad using chicken flakes, pickle relish, onion, mayonnaise and salt and pepper to taste. Just mix everything together. Pretty simple, right? Of course, I don’t eat the Chicken Salad alone. I eat it with lettuce. It’s also good on bread as a sandwich but you know me, I try to stay away from carbs as much as possible.
Ingredients.
I always use Lady’s Choice Real Mayo. The real thing and not the Lite Mayo we can now find in most groceries.
Mix everything together.
